Lemon Crinkle Cookies

½ cups Butter, Softened 1 cup Sugar ½ teaspoons Vanilla Extract 1 egg 1 tsp Lemon Zest 1 Tbsp Fresh Lemon Juice 1-½ cup All-purpose Flour ¼ teaspoons Salt ¼ tsp Baking Powder ⅛ tsp Baking Soda ½ cups Powdered Sugar Preheat oven to 350 degrees. Grease pans well and set aside.  In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest and juice. Scrape sides of bowl and mix again. Stir in all dry ingredients (except powdered sugar) slowly until just combined. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.  Bake for 9-11 minutes or until bottom of cookies begin to barely brown.  Remove from oven and cool cookies about 3 minutes before transferring to cooling rack. *If using a non stick darker baking tray, reduce baking time by about 2 minu...

Hyde Park Honey Cookies

Hyde Park Honey Cookies   This cookie is one of the kids'  favorites!   2/3 cup oil (I usually only use 1/2 cup and they are still plenty moist) 1 cup sugar 1/4 cup honey 1 egg 2 tsp. vanilla 2 1/4 cup flour 2 tsp. soda 1 tsp. salt 1 tsp. cinnamon 1 Tbsp. cinnamon and 1/c up sugar (to roll the cookies in) Mix oil, sugar and honey. Add eggs and vanilla. Add flour, soda, salt and vanilla. Form 1" balls and roll in cinnamon sugar mixture. Place on ungreased cookie sheets and bake at 350 for ten minutes. If doubling, do not double the soda, just add 1 teaspoon per and also go scant on the flour and salt.

Super Yummy Healthy Cookies

Super Yummy Healthy Cookies At least that’s what Doug thinks because they have coconut, nuts and raisins in them. I made these cookies years ago when I was out of chocolate chips and in the mood for cookies. They've been a huge hit ever since! 3/4 cups brown sugar 3/4 cup sugar 3/4 cup butter flavored Crisco or real butter 2 eggs 2 ½ whole wheat cups flour (it gives a nutty flavor) 1 tsp. Salt 1 tsp. Baking soda 1 tsp. Baking powder 2 tsp. Vanilla 1 cup chocolate chips 1 cup raisins (soaked in hot water for about fifteen minutes, then drained) 1 cup coconut 1 cup chopped pecans Mix sugars, butter and eggs until creamy. Add dry ingredients until mixed. Place teaspoonful of dough on pan. Bake for 10-12 minutes at 375̊. Makes about 60 cookies. (Note: craisins work great instead of raisins!) Enjoy!

Blueberry-Lemon Scones

Here's the recipe for the scones.  They were pretty tasty for scones, but how could they not be with all that butter and cream?  Right?   Blueberry and Lemon Cream Scones 2 cups all-purpose flour 1 tablespoon baking powder 1/2 teaspoon salt 4 tablespoons sugar, divided in half 1/2 cup butter (1 stick) 1 1/2 teaspoons vanilla 1/2 cup whipping cream 2 eggs, beaten 3/4 cup fresh blueberries zest of 1 lemon juice of 1/2 of 1 lemon In large bowl, combine flour, baking powder, 2 tablespoons sugar, and salt.  Mix well.  Cut in the butter.  (I shreded a cold stick of butter with a cheese grater.) Add cream, vanilla and eggs.  Stir just until mixed. Add berries, lemon zest and lemon juice, mix again just enough fold everything in. Orange Rolls

I'm in the mood to bake Orange Rolls.  A friend made them for us back in 1994 and I've never tasted any that were as good since.  Here's her recipe.  It's simple but has to be thought of in advance: 1/2 cup warm water 3 Tbsp. yeast 1/2 cup sugar 3/4 cup warm water 1/2 cup shortening 2 tsp. salt 3 eggs 4 1/2 cups flour Soften yeast in 1/2 cup warm water and set to the side.  Mix sugar, water, shortening, salt and eggs together.  Add yeast mixture. Beat in the flour.  Dough will be soft and sticky.   Refrigerate overnight in a covered container. Make sure that the bowl is large enough for the bread to rise in.  About 3 hours before serving time, roll dough on well floured board into a large rectangle.  Cover with a generous amount of melted butter.  Sprinkle with sugar and grate orange peel over the dough.  Starting on the long edge, roll the dough int...

Oatmeal Crunch Cake

Make this cake.  Tonight.  Seriously. Or at least make the topping and eat it with a spoon.    Oatmeal Crunch Cake 1 1/2 cups boiling water 1 cup regular oatmeal 1/2 cup butter 1 cup packed brown sugar 1 cup sugar 2 egg 2 cups flour 1/2 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg Pour boiling water over the oats in a small bowl and let sit for 20 minutes.  Cream butter and sugars together, then beat in the eggs.  Add the soaked oatmeal.  Sift in the dry ingredients and stir until mixed.  Pour into a 9x13" pan.  Bake at 350 degrees for 35 minutes.  Let cool.  Topping: 1/2 cup melted butter 3/4 cup brown sugar 1 cup chopped pecans 1 cup coconut 1/3 cup evaporated milk 1 1/2 tsp. vanilla Pour all of the topping ingredients into a pan and cook, stirring until it begins to bubble.  Stir in vanilla and spread of top of cooled cake. Broil the cake in the oven until the topping bubbles and star...

Chocolate Chip Pretzel Bar Cookies

This were so nummy!  A super Bowl treat! 2 cups all purpose flour 1-teaspoon baking soda ½ teaspoon salt 1 ½ sticks of butter, softened 1-cup brown sugar ½ cup granulated sugar 2 large eggs 2 teaspoons vanilla 1 – 12 ounce bag milk chocolate chips 1 ½ cups mini pretzels, crushed Preheat the oven to 350. Mix flour, baking soda and salt. In a large bowl, using a mixer, beat the butter with both sugars at medium speed for about 1 minute. Beat in the eggs and vanilla. Add the dry ingredients and mix well. Stir in the chips and pretzels.Spread the batter in the pan. Bake for 30 minutes, or until golden brown. The center will still be a little gooey. Cool completely. Cut into squares and serve. Enjoy!

Sausage Balls

1 pound hot Italian sausage, casings removed 2 1/2 cups baking mix (ie Bisquick) 3 cups freshly shredded sharp cheddar cheese 1/4 cup heavy cream Preheat the oven to 400°F. Line a baking sheet with parchment paper. In a large bowl, combine the sausage meat, baking mix, and cheese. Use your hands to completely mix until well blended. The dough will be crumbly. Use your hands to roll into 1-inch balls and place on the prepared baking sheet. Brush each sausage ball with heavy cream. Bake until golden brown, about 15 minutes.

Fall Apple Dip

Mix the following:  1/2 cup canned pumpkin 3/4 cup cream cheese 1/2 cup brown sugar 2 tsp maple syrup 1/2 tsp cinnamon Mix and enjoy with fresh apple slices!

Nikki's Bread Dip

My new friend, Nikki, made this  outstanding  bread dip that was to die for!  I can't wait to make it myself!  Later, Doug, who'd dished up a plate of treats to enjoy alone during the party, asked, " WHAT was that?!?!"   It was a hit!   8 oz. cream cheese 1 1/2 cup sour cream 2 cups grated cheese 1 tsp. Worchestershire sauce 1 cup chopped ham 1 can green chilis 1/2 cup green onion Mix well, put in a greased pie plate and bake for 1 hour. 

Pumpkin Roll

 Try it! People will think that you've become the next Martha! Try it, I promise, it's not hard at all!! 3 eggs, beaten 1 cup sugar 2/3 cup pumpkin 1 tsp. lemon juice 3/4 cup flour 1 tsp baking powder 1 Tbsp. cinnamon 1 tsp. ginger 1/2 tsp nutmeg 1/2 tsp. salt Prepare the jelly roll pan by laying a piece of parchment paper that covers it completely with an extra few inches on each end. Spray Pam or a cooking oil spray heavily onto the paper. Mix the ingredients well and then pour the mix into the jelly roll pan. Bake for fifteen minutes at 350°. Sprinkle or dust powdered sugar over the baked roll. Cool for a few minutes, but do not wait until the roll is cold. Cover the cake with another piece of sprayed parchment paper. While baking, mix the filling until smooth and creamy. Sloppy Joes in a Pumpkin

Make this yummy dinner your centerpiece, as well as the meal!  Make your favorite sloppy joe recipe, even if it's Manwich.  While is simmers, carve and clean out a pumpkin of desired size.  Place on a baking sheet in a 325 degree oven.  Warm the pumpkin for about 30 minutes.  Remove from the oven and spoon in the sloppy joe meat just before serving, using the pumpkin as the serving container.  Note:  You can put just about any casserole in a pumpkin for the same effect!

Spooky Slush

Spooky Slush 4 cups sugar 4 cups water Bring to a boil.  Add: 1 small package lime jello and dissolve. Add 1 large can Pineapple juice and 5 cups of water.  Divide liquid mixture into two 9x13 pans.  Cover and place in the freezer until frozen solid.  When ready to serve, add 2 liters of Sprite.  (I'll be floating some dry ice in it to spook things up a bit, too!)

Baked French Toast Casserole

  Baked French Toast Casserole    1 loaf French bread 8 large eggs 1  1/2 cups half-and-half 1  1/2 cup milk 3 tablespoons granulated sugar 1 teaspoon vanilla 1/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg Dash salt Tear french bread (I used half Sara Lee multigrain bread and half french) into pieces that are about the size of a large marshmallow.  Cover the bottom of a well buttered 9 x 13"  pan. Combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt in a blender and mix until blended well. Pour mixture over the bread slices.  Cover the bread totally and use a spatula to make sure that it's saturated completely with the milk-egg mixture.  Cover with foil and refrigerate overnight.  (I made it and only waited an hour or so before baking.  It was just fine.) Pumpkin Spice Bread

Pumpkin Spice Bread 3 cups sugar 1 cup vegetable oil 4 eggs 1 16 oz. can pumpkin 3 1/2 cup flour 2 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. ground cloves 1/2 tsp. ground allspice 1/2 cup water Preheat oven to 350°.  In a large bowl, combine sugar, oil and eggs.  Add pumpkin and mix well.  Combine dry ingredients and add pumpkin and water alternately.  Pour into 2 greased 9x5x3" loaf pans.  Bake for 60-70 minutes or until bread is done.  Cool in pans for ten minutes before removing to a wire rack.  Cool completely.  Makes 2 loaves. 

Pumpkin Chocolate Chip Muffins

These are, without a doubt, the favored muffins in our home! The batch is huge, which makes for a great treat to take to any gathering at any time of the day! Enjoy! 2 cups oil 2 cups brown sugar 4 cups sugar Beat together and add: 8 beaten eggs 1 1/2 TBLS baking soda, dissolved in 1/3 cup warm water 4 cups pumpkin (I use one large can, even though it's about 1/3 cup short) 7 cups flour 2 tsps baking powder 2 tsps salt 1 1/2 tsps ginger 2 tsps cloves 2 tsps nutmeg 4 tsps cinnamon Mix well, then add: 1 cup warm water 2 cups semi sweet chocolate chips 1cup milk chocolate chips Fill muffin cups about 2/3 full. Bake @ 350 degrees for 15-20 minutes as soon as they start to brown. Do not over cook.   Speaking of muffins... Gracie told us the other morning that it's getting so cold, soon, she'll "need to wearing muffins. "  Muffins, Grace?  Did you mean Mittens?  "Whatever.  They're both warm!"  

Summer Garden Casserole

Summer Garden Casserole Layer loosely in the pan...(enough to cover the layer below) chopped zucchini (quartered lengthwise then sliced)  chopped carrots (quartered lengthwise, then sliced) salt and pepper to taste frozen corn or fresh corn cut off the cob about 1/2 cup uncooked rice finely chopped onion browned hamburger (cooked with onions and peppers or how you like it...mine had garlic too) salt and pepper again to taste pour tomato juice over the entire thing  (don't make things float, but add enough that it will moisten everything in the pan) Cover with foil and bake for 2 hours at 350 degrees.  Enjoy!

Sugar Cookies and Fruit Pizza

1 1/2 cup butter, softened 1 1/2 cups sugar Cream together well, then add: 2 eggs 1 tsp. vanilla 4 cups flour 1 tsp. salt 1 tsp. soda 1/2 cup milk You may have to add a bit more flour, but this dough will be very sticky.  It also doesn't have to be chilled like a lot of sugar cookie doughs before rolling.  It's more of a "scoop" type dough, than a rolled cookie dough, and as you can see by the amount of butter, they are moist cookies!  This recipe will fill one large jelly roll pan, like in the photograph and they will be very thick.  Bake at 350 about 15 minutes or until it barely turns golden on the bottom. I do love Denise's sugar cookies! Raspberry-Lemonade

Frozen lemonade, made as instructed one 2-liter bottle of Sprite for each 3 cans of lemonade concentrate  1 cup of fresh raspberries.  The lemons were just because it made it prettier, but they also tartened it up! 

OREO RICE KRISPIE TREATS

OREO RICE KRISPIE TREATS 1/3 cup of butter 16 oz. bag of mini marshmallows 8 cups of rice krispies 1 1/2 rows of Oreos Put the butter and marshmallows in the giant Tupperware Bowl.  Place in microwave for about 2 minutes.  All microwaves are different but cook until the marshmallows are puffed up to double their size.  (Watching the marshmallows poof is the funnest part of making these treats!)  While they are cooking, half of a regular size package of Oreos.  (Iuse the blender.)  Remove marshmallows from microwave, stir in the oreos and the krispies.  Place in a buttered jelly roll pan or a 9x13 for thicker treats.  Keep covered tightly.

Chinese Cabbage Salad

·        Here's a familiar but sometimes forgotten recipe for what we enjoyed for dinner last night...it sounds strange, if you aren't familiar, but trust me, you will LOVE this salad! Chinese Cabbage Salad 1 head of chinese cabbage (or regular) 1 bunch green onions 1 can Swanson's chicken breast (optional, but I prefer it) 1/2 cup butter 2 packages of ramen noodles (chicken flavored) 1/2 cup sesame seeds 1/2 cup slivered almonds 1cup canola oil 1/2 cup sugar 1/2 cup cider vinegar Chop cabbage and green onions. Drain the can of chicken and toss  chicken into a large bowl and mix well.  For dressing, combine the oil, sugar and vinegar in a container and mix well.  Pour over the cabbage mix.  Toss and coat well.  Chill. Melt butter in a large frypan.  Crush the dry ramen noodles into tiny pieces and add to the melted butter.  Add sesame seeds and almonds.  Sautee until the almonds begin to tu...

Mango Salsa

2 mangoes 2 apples 1 small purple onion (I used about 1/3-1/2 cup) cilantro (about 2 T. dried because I was out of fresh) juice of 2 limes salt to taste Put all ingredients in a food processor and chop.  Pour lime juice over top and stir in.  Add salt to taste.  Serve with chips.  (I used Mission Style chips.)  Enjoy!!  BUT... for even better delight, I made the second batch to take to Carol's and spread it on a plate covered with 16 oz. softened cream cheese.  OH MY!!!  Milder because of the cream cheese.   And of course, everything's better with cream cheese on it!  ENJOY twice as much!

Peanutbutter Chocolate Bites

SUPER SIMPLE and MOST TASTY!! 1 1/3 cup sweetened condensed milk 2/3 cup chunky peanutbutter 1 tsp. vanilla 2 cup bisquick 2/3 cup chocolate chips Mix the milk, peanutbutter and vanilla until smooth.  Add the bisquick and then chocolate chips.  Spread into a 9x13 pan and bake for 14 minutes at 375 until lightly brown. Cool before cutting.  Enjoy!

Crumb Coated Talapia

Crumb Coated Talapia 1/2 cup crushed salad croutons 2  tbsp. fresh grated parmesan cheese 1 1/2 tsp. lemon-pepper seasoning 1/4 tsp salt 4 tilapia fillets (6 oz. each) 3 tbsp. olive oil Combine the topping ingredients.  Place the filets in the crumb mixture and cover to coat.  In a heavy skillet, cook fillets over medium heat for about 4-5 minutes on each side.  The fish will flake with the fork when it's done.  Enjoy!

Bran Muffins

Bran Muffins 1 cup bran cereal 1 cup boiling water 1 ½ cup sugar ½  cup oil 2 eggs 2 cups buttermilk 2 cups wheat bran 2 ½ cup flour 2 ½ tsp. baking soda ½  tsp. salt Boil water and add cereal; stir together and cool for 10 minutes.  Cream sugar, oil, eggs and buttermilk.  Add dry ingredients.  Drop in muffin pan.  Cook about 15 minutes at 400 degrees.  What you don’t use can be stored about 6 weeks in air tight container in fridge.

Super Bowl Sandwiches

These sandwiches were talked about for a few years before I actually tried them and now, our family can't wait for Super Bowl Sunday dinner! My good friend, Natalie, shared this SUPER recipe from Natalie, in her words: (Makes 8 openface sandwiches.  I usually have to double or triple this depending on the company.) In a small bowl combine : 1 small can chopped olives, drained 1/2 tsp. chili powder 1/2 tsp. cumin 1/4 tsp. salt Set aside 2 tbsp as a final garnish. To remaining add : 1/2 cup sour cream 1/2 cup mayonnaise 1/3 cup green onion, chopped Slice a loaf of french bread and put the slices on an ungreased cookie sheet.  Spread each slice with about 1 tablespoon of the mayonnaise mixture.  Top with thinly sliced deli turkey (smoked, roasted, honey...doesn't matter).  If you fold one large slice up to fit on each sandwich, it's enough, but you can put more on if you like!  Next top with slices of tomato...not too thick.  Spr...

super bowl cheeseball

I've decided that the reason we have Super Bowl parties is not to watch the game but it takes about that long to start craving cheeseballs, dips and party food again after the holidays!  I came across this old recipe for a popular dip from the 70's and made it, adding a brick of cream cheese: 1 cup sour cream 1 cup mayo 1 tsp. dried dill 1 tbsp. parsley 1 green onion 1 tsp. garlic salt 1 tbsp. lemon juice Combine and chill for at least an hour before serving to let the flavors blend.

Erin's cheeseball

 OH MY!  This was written exactly like this from an old friend.  It's out of this world delish! 24 oz of cream cheese 1 cup shredded cheese ( I used mild cheddar) 1/4-1/2 cup green onions chopped 1 jalapeno (fresh) seeded and chopped a 2 second pour of pineapple juice 2 handfuls of crumbled bacon 2 shakes of Worcestershire sauce 2 or 3 crushed cloves of garlic  there ya go....if I forgot something I will add it later :)  And later she added:  I rolled it in chopped roasted almonds ( chopped them myself)

Peanut Butter Balls

Peanut Butter Balls   1 cup butter 4 cups powdered sugar 1 tsp. vanilla 1 1/2 cups peanut butter (I use chunky Adams Natural) 1 bag milk chocolate chips Melt the butter and peanut butter in a saucepan on medium-low heat. Add the powdered sugar and vanilla and stir until mixed well. It will be a very thick consistency, almost a ball. Remove from heat. Roll the "dough" into teaspoon size balls. Cool for about fifteen minutes in the refrigerator. In your microwave, melt the chocolate chips. SLOWLY! Thirty seconds and remove from the microwave and stir, then thirty seconds more and again until they are creamy. Do not overcook the chips or they will crystallize and be of no use. Place a piece of wax paper on a cookie sheet or jelly roll pan. Using a fork or spoon, roll the balls into the melted chocolate chips until completely covered. Place them on the wax paper and chill. Enjoy!!

Rocky Road

This is a great treat to share with neighbors and friends on a festive plate and they can be made in a jif!  Rocky Road ... 1 bag of Hershey's Milk Chocolate Chips 1 can Sweetened Condensed Milk 2 Tbsp. Butter 1 - 1 1/2 cups salted peanuts 1 - 1 1/2 cups cashews 1 10 oz. bag mini-marshmallows Heat all except the marshmallows in a large bowl in the microwave until barely melted. Do not overcook! Stir in the bag of mini-marshmallows. Pour into a buttered 9x13 pan or Tupperware. Chill, cut into squares. Walk an extra mile tomorrow! Enjoy!  

Thai Coconut-Ginger Soup

Another fast and nummy soup.  It's that time of the year when fast and nummy is what we need!  Seriously, this soup could not be any more simple.  Jamie made it last week for our Donut night.  It was a hit.  It's one of those, "You'd never even try it if you knew what it was" type recipes!  I made it last night and it was a hit! Thai Coconut-Ginger Soup 1 envelope from one packet of "Taste of Thai" Coconut-Ginger Soup Mix (found in the oriental section at your grocers) 1 can of coconut milk 1 can of chicken broth 1 cooked chicken breast (cut into small pieces) Cooked rice Cilantro Sauteed Mushrooms, if desired Salt and Pepper to taste Put packet, milk, broth and chicken into a pan and simmer.  Add sauteed mushrooms., if desired.  (Our kids don't like mushrooms, so I served them on the side and added them to the grown-ups.) Top with fresh cilantro just before serving. Place one scoop of rice into servi...

Salsa Soup

Here's a pretty quick but very tasty soup recipe that may just hit the spot over these next few busy days!  Try it, you'll love it! 2-4 chicken breasts 4 cups water 2 - 14 oz.cans chicken broth 1/2 tsp. garlic salt 2 Tbsp. dried onion 2 tsp. chili powder 2 cups salsa 3 cloves fresh garlic 1 small bag of carrots 1/2 bag frozen corn juice from one fresh lime 1/2 cup chopped cilantro 1/2 bunch chopped green onions Boil everything but the cilantro and green onions until the veggies are tender.  Remove the chicken and shred with a fork then add it back to the soup.  Just before serving, add the fresh cilantro and green onions on top.  Serve with Fritos or Doritos, sour cream, shredded cheese, avocado or guacamole and lime wedges.  Very tasty!  Enjoy!

Crescent Roll Cheesecake

2 packages refrigerated crescent rolls 2 (8 ounce) packages cream cheese, softened 1 cup sugar 1 tsp. vanilla 1/2 cup butter, melted 1/2 cup cinnamon sugar Unroll one package of crescent rolls and line the bottom of a 9x13" pan.   Flatten out well.  Mix together the cream cheese, sugar and vanilla.  Spread this mix over the crescent rolls.  Unroll the other can of crescent rolls and place on top of the cream cheese mix.  Pour the melted butter over the top and sprinkle with the cinnamon sugar.  Bake at 350 degrees for 30 minutes.

Norma's Donuts

Seriously, these are the best homemade donuts ever! I Invite a family over to join you and have some fun! 1 cup shortening (I used butter flavored) 2 Tbsp. yeast dissolved in 1/2 cup warm water 5 eggs 1 cup sugar 1 Tbsp. salt 1/2 tsp lemon extract 2 cups mashed potatoes (she recommends making them from instant potatoes) 4 cups luke warm milk 5 pounds of flour (about 10 cups) Scald milk with shortening, add salt, sugar and enough flour to the batter about the consistency of cake batter. Add the potatoes, beaten eggs and dissolved yeast, extract and enough flour to make a soft dough. Let raise twice and roll out flat. Cut into donut shapes. Let raise until light and fluffy (about fifteen more minutes.) Cook in hot oil (375°), turning as they become golden brown. Glaze or frost or dip in cinnamon sugar, plain sugar or powdered sugar. Enjoy! A few extra tips: Each batch makes about 60ish doughnuts.  We doubled the batch last night and used one gallon of Wesson Oil....

Cranberry Roast

A tasty New Years Eve pork roast!    1 ~ 3 pound rolled pork loin 1 can jellied cranberry sauce 1/2 cup sugar 1,2 cup cranberry juice 1 tsp. dry mustard 1/4 tsp. ground cloves Place all ingredients in crockpot and cook for six-eight hours.  When roast is done, remove from the crockpot.  Skim the fat off from the juice that is remaining in the crockpot.  Measure 2 cups of the meat juice, adding water if you need to and pour into a saucepan.  Bring to a boil over medium high heat.  Combine 2 Tbsp. cornstarch and 2 cups cold water to make a past then add that paste to the meat juices .  Cook and stir to make a gravy.  Pour the gravy over the slices of roast as served. 

Chocolate Raspberry Cheesecake!

Here's one of my favorite "easy" recipes and at this busy time of the year, that's exactly what we all need!  Chocolate Raspberry Cheesecake! One pre-made Chocolate Pie Crust 6 ounces cream cheese, softened 1 can sweetened condensed milk 1 egg 3 Tbsp. Lemon Juice 1 tsp. Vanilla 1 cup fresh or frozen raspberries Chocolate Glaze Preheat oven to 350. Beat Cream cheese till fluffy. Gradually add sweetened condensed milk until smooth. Add egg, lemon juice and vanilla. Mix. Put raspberries on bottom of crust. Pour mixture over berries. Bake 30-40 minutes or until the center is done.  Chocolate  Glaze Melt 2 ounces baking squares (I used chocolate chips) and add 1/4 cup whipping cream. Cook and stir until smooth

German Pancakes

Here's the most favorite breakfast recipe in the Corbridge home.  It's so simple and is requested for every birthday meal.    It's a perfect Christmas morning breakfast dish or would be great to make any morning during the holiday break.        9 eggs 1 1/2 tsp. Salt 1 1/2 cups of milk   1 1/2 cups of flour Preheat oven to 400̊. Place 1/4 cup of butter in 9x13 pan and put pan in oven until butter is melted and sizzling. While it’s melting, mix the ingredients in the blender until frothy, adding flour slowly last. Remove pan from oven and make sure that the entire pan is covered in butter. Pour the egg batter into the hot sizzling buttery pan. Place in oven and back for 12 to 15 minutes, until the batter is rising, golden and bubbly. It will poof up and be very pretty! Festive Spinach Salad

This has to be my favorite salad at any time of the year, but it's especially fun at Christmas-time because it's so pretty to look at! Every time I serve it, Doug says, "You can make this salad every day!" Fresh spinach leaves, torn into bite-sizes Fresh romaine lettuce, if desired Can of Mandarin Oranges, drained and sliced in half about 1/2 cup of salted roasted sunflower seeds (not in the shell) or pinenuts about 1/2 cup of shredded fresh Romano cheese shredded about 1/2 cup of Mozzarella Cheese, shredded  or  thin slices of String cheese (dime size discs) about 1/2 cup Craisins Note: My "about 1/2 cups" are very generous!  Pour Brianna's Poppy Seed Dressing over salad just before serving and toss well. Peppermint Trifle

This recipe sounds like quite the task.  BUT... Actually, this whole thing can be prepared while the brownies bake and then the whole thing took about five minutes to "concoct".  It sounds strange.  BUT.  It's very pretty, it looks like you spent hours on it and oh sooooooooo nummy! Here's what you'll need: 1 box brownie mix. Bake brownies as directed.  Cool and frost with cream cheese frosting.  Cut into 1 inch squares.  2 cups cream cheese chocolate frosting .  (I keep this frosting made and ready in the refrigerator all the time for brownies and cakes.) 4 cups powdered sugar 8 OZ. cream cheese 1/2 cup softened butter 1 1/2 tsp. vanilla 1/2 cup cocoa NEXT: 1 large package instant vanilla pudding 1 regular size Cool Whip 1 tsp. peppermint flavoring Red food coloring Mix pudding as directed on the box.  Add peppermint flavoring and red food coloring.  Whip well.  G...

Crock Pot French Dip Roast

Crock Pot French Dip Roast Honestly, everyone that I have shared this recipe with,  in the past twenty years, has made it a staple in their home.  So simple and soooooo easy! 1 packet Au Jus Mix 1 packet Good Seasons Italian Dressing Mix 1 can beef broth 3-4 pound Chuck or rib roast Put all ingredients into the crock pot and cook for 6-7 hours.  MMMMMMM! 

White Chocolate Party Mix

Here's a quick and easy treat to take to a party or to package up pretty and share with neighbors: White Chocolate Party Mix 16 cups popped popcorn 3 cups frosted Cheerios 1 1/2 cup cashews 1 bag pretzel sticks 4 Skor Bars, crushed 2 pkgs white chocolate chips 2 pkgs M&Ms (holiday colors) *add last* Melt white chocolate and oil in microwave.  Do NOT overcook.  Stir until smooth.  Pour over mixture, mix well.  Enjoy!

7 Layer Chicken Casserole

 7 Layer Chicken Casserole! This is a great meal to serve on a night that you don't have lots of time to spend in the kitchen. Ten minutes in prep time and your out of the kitchen while it bakes! Very tasty! Layer 1: Pour half a bag of your favorite tortilla chips (or Fritos) into a greased 9x13" pan. Layer 2: Spread about 3 cups of cooked, chopped chicken over the chips. Layer 3: Pour one can of chicken and Wild Rice soup over that. Layer 4: Pour one can of Mexican spiced tomatoes over the soup. Layer 5: Add 2 cups of shredded cheese. (I use more.) Layer 6: Cover with the rest of the chips. Layer 7: Add two more cups of shredded cheese on top of this. Cover with foil, that has been sprayed with Pam and bake for 40 minutes at 350. Serve with salsa, sour cream and guacamole, if desired. Enjoy!

Mom's Raw Apple Cake

This is a family must since I was about ten years old!  We love it, but I now have cut the oil in half and use applesauce for the other half.  It's just as moist and nummy! 3 eggs 2 cups sugar 1 ½ cups oil 3 cups flour 3 cups shredded apple 1 cup chopped pecans 1 tsp. Salt 1 tsp. Baking soda 1 tsp. Vanilla 1 tsp. Cinnamon Cream oil and sugar together. Mix dry ingredients in. Add eggs, apples, vanilla and nuts. VERY thick. Pour into greased and floured bundt pan. Bake 1 hour and 15 minutes at 350̊. Sprinkle with powdered sugar when completely cool. Store loosely covered.
