Super Bowl Sandwiches
These sandwiches were talked about for a few years before I actually tried them and now, our family can't wait for Super Bowl Sunday dinner! My good friend, Natalie, shared this SUPER recipe from Natalie, in her words:
(Makes 8 openface sandwiches. I usually
have to double or triple this depending on the company.)
In a small bowl
combine:
1 small can chopped olives, drained
1/2 tsp. chili powder
1/2 tsp. cumin
1/4 tsp. salt
1/2 tsp. chili powder
1/2 tsp. cumin
1/4 tsp. salt
Set aside 2 tbsp as a final garnish.
To remaining add:
1/2 cup sour cream
1/2 cup mayonnaise
1/3 cup green onion, chopped
1/2 cup mayonnaise
1/3 cup green onion, chopped
Slice a loaf of french bread and put the
slices on an ungreased cookie sheet. Spread each slice with about
1 tablespoon of the mayonnaise mixture. Top with thinly sliced deli
turkey (smoked, roasted, honey...doesn't matter). If you fold one large
slice up to fit on each sandwich, it's enough, but you can put more on if you
like! Next top with slices of tomato...not too thick. Spread on
another small amount of the mayonnaise mixture. Top with three or four
slices of ripe avocado, plenty of grated monterey jack and cheddar cheeses and
then sprinkle a pinch of the left-over olives onto each. Bake at 350
degrees for 15 minutes or until it's all melty and heated through. I
first made these in 1998 for Super Bowl Sunday and they've been a favorite
tradition ever since.
